<p>Die Pilze sind schnelle vorbereitet. Einfach die Champignons putzen und die harten Stielenden etwas zu kürzen. Anschließend kannst du alle Zutaten für die Marinade gut vermischen.</p>



<p>Danach kannst du die Pilze in eine Schüssel geben und sie mit der Marinade übergießen. Vermische alles gut miteinander, sodass alle Pilze von der Marinade bedeckt sind. Lasse die Champignons über Nacht im Kühlschrank durchziehen. Wenn es schnell gehen soll, reichen auch zwei bis drei Stunden.</p>



<p>Stecke die marinierten Champignons auf Spieße. Je nach Größe der Spieße sollten etwa 4-6 Champignons auf einem Spieß Platz finden. Grill die Spieße bei mittlerer, indirekter Hitze für 10-15 Minuten. Wende die Spieße dabei gelegentlich, damit sie von allen Seiten gleichmäßig gegrillt werden und eine dunkelbraune Farbe annehmen.</p>

<p>Ab und zu werde ich gefragt, warum denn beim Grillen der Bacon so gut schmeckt? Das ist ganz einfach: selber machen!</p>



<p>Um den Bacon herzustellen, benötigt Ihr keine besonderen Kenntnisse, es brauch dazu nur Schweinebauch, Salz, Gewürze und etwas Geduld. Mit den Gewürzen könnt Ihr auch experimentieren und euren ganz eigenen Bacon-Flavor zu kreieren. Ersetzt zum Beispiel in meinem Rezept das Knoblauch- oder Zwiebelpulver mit Sezuanpfeffer, um dem Bacon einen asiatischen Touch zu verleihen.</p>



<p>Zum Bacon selber machen benötigt Ihr auch keine Hitech Räucherofen. Ein normaler Gasgrill, Kugelgrill oder ein einfacher Smoker genügt vollkommen. Für den Gasgrill habt Ihr idealerweise eine Räucherbox, welche Ihr mit euren bevorzugen Woodchips bestückt.</p>



<h2 class="wp-block-heading">Bacon Pökeln:</h2>



<p>Um den Bacon zu salzen ist die Verwendung von Nitritpökelsalz notwendig, um am Ende die schöne rote Farbe zu erhalten. Außerdem dient das Nitritpökelsalz der Konservierung. Zusätzlich empfiehlt sich die Verwendung von Ascorbinsäure, um die Umrötung zu unterstützen und stabilisieren. Diese hat auch den Vorteil, dass das Nitrit durch das Vitamin C (Ascorbinsäure) darin gehindert wird, sich zu Nitrosaminen weiterzubilden. Des Weiteren wird Nitrit zudem auch durch Reifung und Lagerung weiter abgebaut. </p>



<p>Wundert euch nicht, wen in amerikanischen Rezepten von lediglich ein paar Gramm Pökelsalz geschrieben wird und viel &#8222;kosher&#8220; Salz (Kochsalz ohne Zusätze) verwendet wird. In den USA gibt es keine Grenzwerte für Nitrit im Pökelsalz, der Nitritgehalt in amerikanischen Pökelsalz ist 10x so hoch wie in Deutschland erlaubt.</p>



<p>Ihr könnt auch etwas weniger Salz als im Rezept angegeben verwenden. Verwendet dann etwas mehr Gewürze, der Haltbarkeit sollte etwas weniger Salz keinen Abbruch tun.</p>

<p>Bacon selber machen ist nicht allzu schwer, diese Variante lässt den Bacon eher garen, da hier heißgeräuchert wird. Durch das Heißräuchern bekommt der Bacon eine andere Konsistenz als dies bei typisch Deutschen kalt räuchern der Fall ist.</p>



<p>Kaltgeräucherte Schweinebauch definiere ich eher nicht als Bacon, sondern als Kochspeck (nass gepökelt), wie er üblicherweise in DE zu bekommen ist. Es gibt viele Namen für den Schweinebauch, der gepökelt und nur leicht geräuchert ist. Zum Beispiel: Gelderländer Speck, Kochspeck oder auch Frühstückspeck. <br></p>

<p>Diese Honig Senf Sauce habe ich bereits seit Jahren in meiner Rezeptsammlung. Das hat den einfachen Grund, dass sie schnell, einfach gemacht ist und lecker schmeckt.</p>



<p>Verwenden könnt Ihr die Sauce ganz klassisch für gegrilltes und zum Fondue. Außerdem könnt Ihr sie auch zum Bepinseln von Chicken-Wings benutzen, um diese gegen Schluss zusätzlich zu aromatisieren.</p>



<p>Auch für Wraps oder für einen dekorativen Saucenspiegel auf Teller verwendbar.</p>



<p>Die Sauce hält mehrere Wochen im Kühlschrank, Ihr sollten deshalb gleich schon einmal ein bisschen mehr machen, den lange wird die Sauce nicht herumstehen. Ich benutze zum Aufbewahren Bügelgläser oder auch Schraubgläser. </p>

<p>Dieses Sandwich ist in meiner persönlichen Hall of Fame, wenige Zutaten aber lecker. Das <strong>Philly Cheese Steak Sandwich</strong> ist schnelle gemacht und punktet durch den herzhaften Geschmack, krosses <strong><em>Baguette</em></strong> und den geschmolzenen Käse.</p>



<p>Um das <strong>Sandwich </strong>zu machen müsst ihr nicht unbedingt am Grill stehen, Herd und Pfannen in eurer Küche sind ebenso geeignet. Dem Geschmack tut dies keinen Abbruch. </p>



<p>Das <strong>Rezept </strong>ist auch einfach abzuwandeln. Fügt Rote Zwiebeln hinzu, welche ihr mit dem Paprika anbratet oder nehmt roten Paprika dazu, für mehr Farbenspiel. Auch muss es nicht Cheddar Käse sein, versucht es mit einem herzhaften Bergkäse.</p>
