<p class="has-medium-font-size">Wird in Deutschland hauptsächlich für Rinderrouladen verwendet. An- und Zuschnitte für ein sehr mageres Gulasch. Steaks von der Oberschale sind selterner zu finden.</p>

<p class="has-medium-font-size">Die Oberschale lässt sich auf für ein sehr mageres Bratenstück verwenden. Einen Schmorbraten daraus zu machen z. B. Sauerbraten würde ich nicht empfehlen, da dieser aufgrund des sehr mageren Fleisches durchaus trocken wird. </p>



<p class="has-medium-font-size">Ware von Deutschen Rindern, Fleckvieh, seit einer Weile auch marketingwirksam als Simmentaler bezeichnet, eignet sich aufgrund der Fleischstruktur eher weniger für Steaks und wird zäh werden. Sollte Ihr jedoch Ware von einer Färse bekommen, könnte Ihr, nach guter Reifung auch mal sein Steak von einem deutschen Rind aus der Oberschale ausprobieren.</p>



<p class="has-medium-font-size">Solltet Ihr jedoch Zugriff auf andere Rassen haben wie z.b. Angus oder auch Herforder Rinder, lohnt es ich auch aus der Oberschale ein Top Round Steak zu schneiden.</p>



<p class="has-medium-font-size">Am besten Ihr mariniert die Steaks, wie auch die <a href="https://www.meatwant.de/fleischkunde/sirloin-tip-steak-roast-rindernuss-kugel/">Sirloin Tip Steaks</a>, damit erzielt ihr einen positiven Effekt auf die Zartheit und habt noch zusätzlich Geschmack mit in das Fleisch gebracht.</p>



<p class="has-medium-font-size">Um die Ausbeute an Rouladen zu erhöhen, wird die Rinder-Oberschale in Deutschland gerne mit der Faser geschnitten. Dies ist für ein Schmorgericht wie Rouladen nicht unbedingt schlimm. Möchtet ihr jedoch das Rouladenfleisch z. B. zum Kurzbraten verwenden, wie ein Geschnetzeltes oder eben ein Steak, ist eine mit der Faser geschnittenen Roulade denkbar ungeeignet.</p>

<p class="has-medium-font-size">Die Zubereitungszeit kannst du stark verkürzen, indem statt klassischem Rouladenfleisch, Fleisch zum Kurzbraten verwendest. Rinderhüfte, Rinderfilet oder auch Rumpsteak sind hier eine gute Wahl.</p>



<p class="has-medium-font-size">Lasse dann die Sauce aber ohne das Fleisch kurz köcheln und gib die gebratenen Fleischstreifen ganz zum Schluss dazu. Ohne dass die Sauce nochmal aufkocht.</p>

Evtl. in zwei Sendungen braten, damit die Streifen nicht zuviel Wasser ziiehen. Aus dem Topf nehmen und beiseite stellen.</div></li><li id="wprm-recipe-548-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Den Speck im selben Top auslassen/anbraten und nach knapp 5 min die Zwiebel dazu geben, Farbe nehmen lassen, leichte Bräune! Die Champignons könnt ihr an dieser Stelle auch hinzufügen.
Dannn die Gurken kurz mit braten.</div></li><li id="wprm-recipe-548-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Den Senf unterrühren und auch kurz mitbraten lassen. Mit dem Rotwein und der Fleischbrühe ablöschen und das Fleisch wieder hinzugeben.</div></li><li id="wprm-recipe-548-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Das ganze im geschlossenen Schmortopf ca. 60 min &#8211; 90 min köcheln lassen, bis das Fleisch für euch weich genug ist. Immer mal zwischendurch umrühren. Am besten mit einem Pfannenwender mit dem ihr die Röststoffe vom Boden des Schmortopf lösen könnt.</div></li><li id="wprm-recipe-548-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Die Speisestärke mit etwas Wasser verrühren und die Sauce damit eindicken.
