<p class="has-medium-font-size">Wenn Ihr im Handel ein Stück Fleisch kauft, egal wo und bei wem, bekommt ihr in der Regel ein Stück vom Simmentaler oder Artverwandten, beziehungsweise von einer stark artverwandten Rasse, welche zur Milchproduktion eingesetzt wird und die männlichen Tiere zur Fleischproduktion.</p>

<p class="has-medium-font-size"><strong>Steaks / Kurzbraten:</strong> <br>Da es sich um eine Mischrasse handelt, sollte Ihr bei der Auswahl daran denken, dass Steaks nur sehr gut gereift, eine entsprechende Zartheit entwickeln. Persönlich sind mir drei Wochen am liebste. </p>

<p class="has-medium-font-size"><strong>Braten</strong>:<br>Das Fleisch der Rasse eigent sich gut für Braten jedlicher Art. Verwendet dafür Stücke aus der Keule, wie Nuss, Rolle (Walholz) oder auch aus der Schulter das falsche Filet (Bug-Filet, Runder-Bug) gelegentlich auch Dicker Bug.<br>Wenn es saftiger sein soll Hohe-Rippe (Entrecote, Rib-Eye)</p>



<p class="has-medium-font-size"><strong>Schmorbraten / Gulasch</strong>:<br>Für gute Schmorstücke oder auch für ein saftiges Gulasch sollte Ihre Teile aus der Schulter verwenden oder generell aus dem Vorderviertel des Rindes, bestens dazu geeignet sind unter anderem: Hals (Nacken), Bugblatt (Flat-Iron) eher für Schmorbratengerichte wie Sauerbraten.</p>



<p class="has-medium-font-size">Wer eher auf mageres Gulasch fixiert ist, kann auch diverse Stücke aus der Keule verwenden. Wie z. B. den Deckel der Nuss oder auch den Deckel der Oberschale.</p>



<p class="has-medium-font-size">Zu Schmorgerichte möchte ich noch hinzufügen, dass die durchwachsenen Stücke geschmacklich das besser Ergebnis erziehen. Ziert euch nicht auch ein etwas sehnigere Stück zu verwenden. Genau für solche Fleischstücke wurde die Zubereitungsart erfunden. Durch das schmoren wir das kollagene Eiweiß aufgebrochen und wird zart.<br></p>



<p class="has-medium-font-size"><strong>Kochen:</strong><br>Zum Kochen eignen sich insbesondere die Rinderbrust oder Leiter (Rippen) diese ergeben einen gute, gehaltvolle Suppe. Das Fleisch lässt sich bestens für Rindfleisch mit Meerrettich verwenden. Außerdem könnt Ihre jedes andere Teilstück zum Kochen, auch oben genannte verwenden, das hängt ganz von eurem Rezept ab. Genannt sei hier zum Beispiel der Tafelspitz, welcher aus der Keule kommt.</p>

<p>Sollte Ihr das Gulasch schärfer würzen, kann auch gerne eine Schälchen mit Schmand mit auf den Tisch gestellt werden. Ein oder zwei Nocken auf das Gulasch kann die Schärfe etwas abmildern. </p>
